C3 Chocolate Cookie


My C3 cookie has three types of chocolate: chocolate cocoa powder, milk chocolate chips and white chocolate chips.
It is a sweet & soft cookie that appeals to children and adults. I add a glug of maple syrup for an extra chewy effect. yum x3.

cocoa powder 30 grams (1oz)
flour 150 grams (5.2oz)
baking power 1 teaspoon
soft butter 125 grams (4.5oz)
light brown sugar 70 grams (2.5oz)
white sugar 30 grams (1oz)
maple syrup 85 grams (3oz) 
vanilla extract 1 teaspoon
1 cold egg 
chocolate chips 100 grams (3.5oz)
white chocolate chips 100 grams  (3.5oz) 

This was enough dough for 24 medium sized cookies and 24 toddler sized cookies. 

1. Heat oven to 170C (150Cfan/ 340 F).
2. In a large plastic bowl sift together flour, cocoa powder and baking powder. Give it a mix and set aside. 
3. Using an electric mixer cream together the butter, light brown sugar, white sugar and maple syrup. Beat in the egg and vanilla extract then slowly mix in the dry ingredients. 
4. Stir in the chocolate chips with a spoon. 
5. Using a tablespoon sized amount, scoop the dough onto a lined baking sheet at least 2 -3 inches apart. 
6. Bake for 15 - 18 minutes until a fork piercing the cookies comes out clean. 
7. Immediately remove the lining (parchment paper or foil) with cookies on top from baking sheet and place on a dry/cool surface. Allow them to cool on the lining (parchment paper or foil) completely before serving.
